The Extraction Matrix: Total Dissolved Solids (TDS) and Extraction Yield Physics
When hot water encounters roasted coffee grounds, a cascade of chemical solubilization takes place. Coffee beans consist of approximately 28% to 30% soluble material by weight, while the remaining 70% is insoluble cellulose framework. However, extracting 100% of available solubles produces an unpalatable, intensely bitter brew filled with chlorogenic acid breakdown products and astringent polyphenols.
The Specialty Coffee Association (SCA) Golden Cup Standard defines the optimal extraction target between 18% and 22% Extraction Yield with a Total Dissolved Solids (TDS) concentration between 1.15% and 1.45% for drip filter coffee.
Key Chemical Phases During Extraction:
1. Organic Acids & Aromatics (0 - 45s): Citric, malic, and tartaric acids dissolve almost instantly along with highly volatile floral esters.
2. Caramelized Sugars & Oils (45s - 120s): Sucrose derivatives, lipophilic flavor compounds, and body-giving lipids dissolve, creating balance.
3. Heavy Bitter Compounds (120s+): Phenylindanes and polycyclic aromatic hydrocarbons solubilize slowly. Over-extraction occurs when these dominate.
To diagnose your brew, utilize a digital optical refractometer. If your TDS measures below 1.15% with a sour, thin finish, your grind size is likely too coarse or your brew temperature too low (under-extraction). Conversely, if your TDS exceeds 1.50% with a drying, harsh back-of-throat bitterness, your extraction yield is too high.
